Holiday Cheer (and lots of good food)

Our Christmas Eve dinner at my aunt's house was absolutely scrumptious.  While there was the traditional turkey and fixings available for most of the fam, the vegetarians and gluten-freers were entreated to my sister-in-law's amazing enchiladas.  This is Erik's plate and he chose the vegan bean-and-corn enchies.  I opted for the deliciously dairy-enhanced sweet potato-with-cream-cheese enchiladas, topped with a naughty amount of Mexican sour cream.  Oh my, how I enjoyed that meal.
